Cilbir
This dish is Turkish eggs, also known as “cilbir.” It has a base of a garlic lemon yogurt, topped with poached eggs, a chili butter, and usually fresh herbs. It is also served with bread. It’s surprisingly easy to make, super good for you, and DELICIOUS!! Here’s how to do it:
Ingredients:
Yogurt base:
plain greek yogurt (1/2-1 cup, up to you)
tsp lemon juice
1 grated garlic clove
pinch salt
2 eggs
your favorite bread toasted
Chili butter sauce:
1 tsp olive oil
1 tbsp butter
1/2 tsp paprika
some chili flakes
To top:
dill
feta (optional)
Process:
mix all yogurt ingredients into a bowl
boil water with some salt to poach eggs, and once boiling, add one egg at a time and leave in water for about 2 min to 2:30, and remove with a slotted spoon and place onto top of yogurt. Repeat for second egg.
Now, toast your bread, and while it’s toasting, make sauce
On medium in a small pan, combine all sauce ingredients and cook for about a minute until everything is combined and melted
Assemble: drizzle sauce on top of yogurt and eggs, and top with dill and feta. Slice bread in half and serve with it to dip.
